Easy Baked Brie with Garlic and Shallots
Who can think of a time when eating a plate of melted cheese didn’t make them feel better? Not me! And that’s how you’ll feel when you cut into this baked brie with garlic. I love to watch the lava-like cheese gush out of the baked crust enclosing it, then scooping it up with some pita bread, chips, or even some crusty Cuban bread.

Baked brie is excellent any time of year, cause let’s face it, ooey gooey melted cheese is great whenever. I love serving this around the Holidays though. It’s so easy and it looks so fancy, it makes everyone feel special when you bring it to a party. Or make yourself feel special and make it just for yourself. Either way, no one’s judging. I make it every year for New Year’s Eve, even when it was just me.
Ingredients

- Brie The star of the show! Get the best brie you can afford.
- Puff pastry or pie crust I use my homemade pie crust, but you can use store bought or puff pastry. Puff pastry is sold in the freezer section of grocery stores.
- Garlic The garlic on top is what really makes this brie even better.
- Shallots I love to saute the shallots for extra flavor before adding them to the brie.
- Olive Oil For roasting the shallots. If you want to add even more flavor, try roasting the shallots in bacon grease.
How To Make Baked Brie With Garlic
Step One Peel the shallot and garlic. Press the garlic or cut into very small pieces. Slice the shallot lengthwise or into rounds. Saute shallots in olive oil until they are translucent and they start to brown.


Step Two Roll out the crust, or, if you are using store-bought or puff pastry, spread it flat on the counter. You won’t actually have to roll it out.
Step Three Place the wheel of brie in the middle of the dough. Top with the suateed shallots and pressed garlic. Fold up one corner of dough over the top of the brie and brush with the egg wash. Fold up the next corner and brush with the egg wash. Continue this process until you have completely covered the brie with the dough.




Step Four Place on a baking sheet and set in the preheated oven on the middle rack. Bake for 30 minutes. The crust should be nice and firm and have a golden brown hue when it’s done baking.
Step Five Remove from the oven and let sit for 10 minutes. It will be very hot when you cut into it, so be careful. Serve with crackers, grapes, apples, jam-the possibilities are endless.

How does it taste? So delicious with the garlic and roasted shallots and melted cheese. So, so good, I can’t get enough.
How does it smell? It’s garlic, so amazing, unless you’re a vampire. If that’s the case, then just add a different topping. And I absolutely LOVE the smell of sauteed shallots. So good!
Is it easy to make? Very easy. You’re just wrapping a wheel of cheese in dough, it really can’t get any easier than that.
Would I make it again? Many times over! This is the perfect appetizer, IMO.

Baked Brie with Garlic and Shallots
Ingredients
- 8 ounce wheel of Brie
- 1 pie crust or puff pastry
- 3 cloves garlic
- 1/2 shallot
- 2 teaspoons olive oil
Instructions
- Preheat the oven to 350 F. Brush some oil or non-stick cooking spray in the middle of a sheet pan.
- Press the garlic or cut it into small pieces. Saute the shallots in olive oil until soft and translucent and starting to brown.
- If using dough, roll it out to about a 12-inch circle. If using puff pastry, lay it out on your work surface.
- Place the wheel of brie in the middle of the dough. Place the garlic and shallots on top of the brie. Fold up one corner of the dough over the brie and brush with the egg wash. Fold up the next corner over the brie and brush with egg wash. Continue this process until the brie has been fully covered. Brush the top with egg wash. If you want, you can add a few shallot rings on top for decoration.
- Place the brie onto the prepared sheet pan and place it in the oven on the middle rack. Bake for 30 minutes, or until the crust is cooked and has a golden brown hue.
- Once it's done baking, remove the brie from the oven. Let it rest for 5 minutes before slicing into it. It will be very hot so be careful.
