Cut up feta into small chunks and put into a food processor. Add 1/2 cup Greek yogurt into the food processor. Blend the two together for 30 seconds.
With the blender running, add 1 tablespoon of lemon juice and 2 tablespoons of olive oil and blend for about 30-60 seconds, or until smooth.
Stir in the 1/2 teaspoon of cracked pepper and 1/2 teaspoon of salt.
Add the whipped feta to a medium saucepan over low heat. Heat the feta until it is bubbling, stirring intermittently, making sure it does not burn. You won't want to walk away while you are stirring this. This should take about 5 minutes.
Pour the whipped feta into a glass dish. Garnish with rosemary, kalamata olives, and red pepper flakes.
Enjoy with pita bread, fresh baked Cuban bread, or sliced apples.
